YOU WILL NEED:
2 Ibs chicken breast - lightly pounded (1/2" thick)
1 large white onion, 1 large red onion
2 large bell peppers (any color)
1 1/2 T avocado oil -
CAJUN CHICKEN FAJITAS Seasoning packet
DIRECTIONS:
Preheat oven to 400°F.
Pound chicken to ½" thick and slice into ½" strips. Slice onions and peppers into ½" strips.
Line an extra-large rimmed sheet pan (15x21) with parchment paper. 4. Place peppers and onions on one half. Drizzle with ½ Tbsp oil and toss with 1 Tbsp seasoning. Spread evenly.
Place a 9x13 baking dish on the other half of the sheet pan.
Add chicken to the baking dish, drizzle with remaining 1 Tbsp oil and 2 Ibsp seasoning. Toss and spread evenly.
Bake 15 minutes. Toss vegetables. Bake 10 more minutes, or until chicken reaches 165°F. Salt and pepper to taste.
Build your fajitas using corn or flour tortillas.
