YOU WILL NEED:
4-6 chicken thighs or boneless & skinless chicken.
1 tbsp minced garlic, 1 Tbsp olive oil
1 Cups basmati white rice
2 Cups chicken broth or water
ARROZ CON POLLO seasoning packet
DIRECTIONS:
Season the chicken with salt and pepper, then place it in the refrigerator for at least 20
minutes.
In a large pot, add one tablespoon of oil and heat until hot.
Add the garlic and the chicken; cook until browned, then set aside.
In the same pot, add 2 cups of chicken broth, and 1 Tbsp of olive oil. Cover, and cook over medium heat until boiling.
Uncover the pot, add the rice-and-chicken seasoning packet and the rice, and cook until the liquid begins to dry up. Add the chicken back in, stir well, and cover again.
Reduce the heat to its lowest setting and continue cooking until the rice is tender (25 to 30 minutes).
Serve hot
